Serves: 1

Ingredients

Chicken breast (cut into 1-inch cubes) 50gm
Onion (cut into 2-inch pieces) 50gm
Garlic 2 cloves
Capsicum (cut into 2-inch pieces) 25gm
Honey 15ml

Olive oil 10ml
Groundnuts (roasted) 10gm

method of preparation

1. In a large bowl, mix oil, honey, soya sauce, pepper powder and salt. Before adding chicken, reserve a small amount of this marinade to brush onto the kebabs while cooking. Place the chicken, garlic, onions and pepper in the bowl and keep it in the refrigerator for at least 2 hours (the longer the better) to marinate.

2. Preheat the grill for high heat. Drain out the marinade from the chicken and vegetables. Thread the chicken and vegetables alternately onto the skewers.

3. Lightly oil the grill rod. Place the skewers on the grill. Cook for 12 to 15 minutes until the chicken juices run clear. Turn and brush with the reserved marinade frequently.

4. Sprinkle groundnuts and serve.
