Lentil and Tomato Soup

This quick, easy-to-prepare, tasty soup topped with the goodness of paneer has ample quantity of protein to offer. It is healthy and filling and provides a balance of carbs and proteins. This gives you the required boost to replenish your worked-out muscles and repair tissues.

Ingredients

Lentils 30gm
Water 250ml
Tomato (peeled and diced) 50gm
Onion (chopped finely) 50gm
Garlic 1 clove
Cumin powder ½ tsp
Pepper powder As per taste
Salt As per taste
Olive oil 5ml
Basil (crushed) To garnish
Paneer (grated) 20 gm

method of preparation

1. Heat olive oil in a large pan. Lightly sauté the onions until brown. Add garlic, tomatoes and lentils to the pan along with water. Bring to a boil, reduce the flame to medium-low and simmer for about 20 minutes or until the lentils become tender.

2. When the lentils become soft, use a blender to puree the soup. Season with cumin powder, salt and pepper.

3. Garnish with basil and grated paneer.
