Tofu Scramble

This simple vegan recipe brings to you the goodness of proteins. With the right texture, along with some spices and vegetables, this snack will help you satiate your hunger pangs in between your main meals.

Tofu(drained and crumbled) 100gm
Tomato (diced finely) 50gm
Spring onions (chopped finely) 20gm
Groundnuts (crushed roughly) 5gm
Pepper As per taste
Salt As per taste
Olive oil 5ml
Coriander leaves(chopped finely) To garnish

method of preparation

1. Squeeze the excess water out of the tofu and crumble it.

2. Heat olive oil in a pan on a medium flame and sauté spring onions until tender. Stir the tomato and tofu and let them cook until the oil separates.

3. Season with salt and pepper. Reduce the flame and allow it to simmer until it is heated thoroughly.

4. Garnish with coriander leaves and sprinkle groundnuts before serving.
